Ingredients Pumpkin stew
- 800 g pumpkin
- 2 red onion heads
- 1 clove of garlic
- 1 fresh red pepper
- 1 tablespoon tomato paste
- 2 tablespoons ground pepper
- 2 bay leaves
- 3 tablespoons oil
- 1 tablespoon thyme
- 5 dl white wine
- A pinch of ground cumin seeds
- Pepper
Preparation
Cut the pumpkin into cubes and set them aside. Then chop the red onion into fine pieces and crush the white onion. Chop the bell bell pepper finely as well. Fry the red onion in the heated oil and stir in the tomato paste. Then add the red pepper, salt and a little pepper together with the wine. Then add all the remaining ingredients except for the pumpkin cubes.
Boil the soup until it reaches the thickness of goulash. Now stir in the pumpkin cubes and cook until the pumpkin is soft. Serve the stew with bread of your choice. It is especially delicious with toasted brown bread.
