Pumpkin stew: Pumpkins are the autumn highlight. Whether it’s for food or decoration, you’ll see pumpkins everywhere in the fall. Besides the fact that we love them in autumn, they are healthy. Below you will find an excellent recipe, for an autumnal lunch: Pumpkin goulash combined with fine ingredients.

The spice mix we use for the pumpkin stew gives the dish a special stamp. Your palate will be delighted by the fresh mixture of red pepper and tomato puree.

This stew is sure to become one of your favorites. You’ll be only too happy to make it for your family or guests who come over for lunch or dinner. Those who love pumpkins will surely ask for the recipe.

Below you will find all the ingredients you need for this delicious pumpkin stew.

Ingredients Pumpkin stew

  • 800 g pumpkin
  • 2 red onion heads
  • 1 clove of garlic
  • 1 fresh red pepper
  • 1 tablespoon tomato paste
  • 2 tablespoons ground pepper
  • 2 bay leaves
  • 3 tablespoons oil
  • 1 tablespoon thyme
  • 5 dl white wine
  • A pinch of ground cumin seeds
  • Pepper

Preparation

Cut the pumpkin into cubes and set them aside. Then chop the red onion into fine pieces and crush the white onion. Chop the bell bell pepper finely as well. Fry the red onion in the heated oil and stir in the tomato paste. Then add the red pepper, salt and a little pepper together with the wine. Then add all the remaining ingredients except for the pumpkin cubes.

Boil the soup until it reaches the thickness of goulash. Now stir in the pumpkin cubes and cook until the pumpkin is soft. Serve the stew with bread of your choice. It is especially delicious with toasted brown bread.
